    Ingredients

    • 1 head garlic

    • 1 lb chicken breast

    • 2 tbsp olive oil

    • 1 cup chopped onion

    • 1 cup sliced mushrooms

    • 4 cups chicken broth

    • 3 cups milk

    • 8 oz broken lasagna noodles

    • 1 cup Parmesan cheese

    • 1 cup heavy cream

    • 2 tbsp chopped fresh parsley

    • 1 tsp dried oregano

    • 0.5 tsp black pepper

    • 1 tsp salt

    Directions

    • Preheat oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, and wrap in foil. Roast in the oven for about 30 minutes until cloves are soft.
    • In a large pot, heat remaining olive oil over medium heat. Add chopped onion and sliced mushrooms. Sauté for about 5 minutes until soft and fragrant.
    • Add chicken breast to the pot and cook until browned on all sides. Pour in chicken broth and bring to a boil, then reduce heat to a simmer.
    • Mash the roasted garlic cloves into a paste. Add to the pot along with milk and broken lasagna noodles. Cook until noodles are al dente.
    • Stir in Parmesan cheese and heavy cream. Cook for an additional 5 minutes, stirring frequently until cheese is melted and soup is creamy.
    • Season with salt, black pepper, and oregano. Garnish with chopped fresh parsley before serving.
