    • 1 pound pork shoulder

    • 1/4 cup white vinegar

    • 1/4 cup orange juice

    • 2 tablespoons achiote paste

    • 2 cloves garlic, minced

    • 1 teaspoon salt

    • 0.5 teaspoon black pepper

    • 1 tablespoon dried oregano

    • 1 cup fresh pineapple, diced

    • 8 pieces corn tortillas

    • 1 cup onion, chopped

    • 1 cup cilantro, chopped

    • 1 piece lime, sliced into wedges

    Directions

    • Combine vinegar, orange juice, achiote paste, garlic, salt, pepper, and oregano in a bowl to create a marinade.
    • Use a zip-lock bag or a large bowl to marinate the pork shoulder in the mixture for at least an hour.
    • Preheat the grill or a grill pan over medium-high heat before arranging the marinated pork slices.
    • Grill the marinated pork slices for about 5 minutes on each side until cooked and slightly charred.
