    Ingredients

    • 2.5 pounds corned beef brisket

    • 1 cup beef broth

    • 2 tablespoons apple cider vinegar

    • 1 teaspoon ground cumin

    • 1 teaspoon chili powder

    • 1 large onion, sliced

    • 2 cups shredded cabbage

    • 12 small corn tortillas

    • 0.5 cup sour cream

    • 0.25 cup fresh cilantro, chopped

    • 1 tablespoon lime juice

    Directions

    • Place the corned beef brisket into a slow cooker and add the beef broth, ensuring the meat is mostly submerged.
    • Add in apple cider vinegar, ground cumin, and chili powder, then sprinkle sliced onion over the top of the brisket.
    • Cover and cook on low for 8 hours or until the meat is tender and easily pulls apart with a fork.
    • Once cooked, remove the brisket from the slow cooker, shred it using two forks, and return it to the liquid in the slow cooker.
    • In a small bowl, combine shredded cabbage, lime juice, and fresh cilantro. Toss until well mixed and set aside for later.
    • Warm the corn tortillas in a pan or microwave until pliable, then fill each with a few tablespoons of shredded corned beef.
    • Top each taco with the cabbage mixture and a dollop of sour cream before serving warm.
