    Ingredients

    • 1 package shortbread cookies

    • 1/2 cup butter, melted

    • 1 cup shredded coconut

    • 1 cup caramel sauce

    • 1/2 cup semi-sweet chocolate chips

    • 1/4 cup heavy cream

    Directions

    • Preheat your oven to 350°F (175°C) and prepare a pie dish with a light coating of butter or non-stick spray.
    • Crush the shortbread cookies into fine crumbs using a food processor. Add the melted butter and mix until the crumbs are evenly coated.
    • Press the cookie mixture evenly into the pie dish to create a crust. Bake it in the preheated oven for about 10 minutes, or until lightly golden.
    • Toast the shredded coconut on a baking sheet. Stir periodically until the coconut turns a golden brown, then remove from the oven.
    • Pour the caramel sauce over the baked crust, spreading it evenly. Sprinkle the toasted coconut over the caramel layer.
    • In a small saucepan, melt the chocolate chips and heavy cream over low heat, stirring until smooth. Drizzle this chocolate over the top of the pie.
    • Chill the pie in the refrigerator for at least 1 hour before serving to allow it to set. Cut into slices and enjoy.
