Chocolate Cherry Upside Down Cake

Healthy Fact of the Day

Cherries are rich in antioxidants and vitamin C. You can lighten the cake by swapping half the butter with unsweetened applesauce or using almond milk for a dairy-free option.

This Chocolate Cherry Upside Down Cake is a stunning dessert that transforms simple ingredients into pure elegance with its glossy cherry topping and rich, moist chocolate cake base. Sweet cherries caramelize with brown sugar to create a beautiful glazed layer that perfectly balances the deep chocolate flavor beneath. When inverted, it reveals a gorgeous presentation that’s as impressive as it is delicious—making it the perfect centerpiece for special occasions.

If you love fruit and chocolate combinations, you’ll also enjoy our Strawberry Peach Crisp for another seasonal fruit dessert with amazing texture contrast. Ingredients

    • 1 cup all-purpose flour

    • 0.5 cup unsweetened cocoa powder

    • 1 tsp baking powder

    • 0.5 tsp baking soda

    • 0.5 tsp salt

    • 1.5 cup granulated sugar

    • 0.5 cup unsalted butter, melted

    • 1 cup milk

    • 2 large eggs

    • 1 tsp vanilla extract

    • 2 cup pitted cherries

    • 0.25 cup brown sugar

    Directions

    • Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line it with parchment paper.
    • In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt to combine.
    • In another bowl, mix the granulated sugar and melted butter until well combined and the mixture is smooth.
    • Add the milk, eggs, and vanilla extract to the butter mixture, whisking until everything is fully incorporated.
    • Gradually add the dry ingredients to the wet ingredients, stirring gently until the batter is smooth and evenly mixed.
    • Arrange the pitted cherries evenly on the bottom of the prepared cake pan and sprinkle the brown sugar over the top.
    • Pour the batter into the cake pan, spreading it evenly over the cherries and smoothing the top.
    • Bake the cake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
    • Allow the cake to cool in the pan for 10 minutes, then invert it onto a serving plate and carefully remove the parchment paper.
    • Let the cake cool completely before slicing and serving. Store any leftovers in an airtight container for up to three days.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!
