    • 2.25 teaspoons active dry yeast

    • 1 tablespoon granulated sugar

    • 2.5 cups all-purpose flour

    • 0.5 teaspoon salt

    • 4 tablespoons unsalted butter

    • 0.5 cup baking soda

    • 6 cups water

    • 0.5 cup granulated sugar

    • 1 teaspoon ground cinnamon

    Directions

    • In a large bowl, combine warm water, yeast, and sugar until dissolved and let sit for 5 minutes until foamy.
    • Add in the flour and salt to the yeast mixture and mix well until dough is formed and starts pulling away.
    • Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic consistency is achieved.
    • Place the dough in a lightly oiled bowl, cover, and allow it to rise in a warm place for about 30 minutes.
    • Preheat the oven to 450 degrees Fahrenheit and line a baking sheet with parchment paper for the pretzels.

    • Once the dough has risen, divide it into 8 equal pieces and roll each into a long rope, shaping into pretzels.
