    Ingredients

    • 8 oz bacon

    • 1 cup onion, chopped

    • 3 cloves garlic, minced

    • 4 cups chicken broth

    • 2 cups half-and-half

    • 16 oz gnocchi

    • 2 cups cheddar cheese, shredded

    • 1 tsp salt

    • 1 tsp pepper

    • 2 tbsp chives, chopped

    Directions

    • In a large pot, cook the bacon over medium heat until crispy, about 8 minutes. Remove bacon and set aside, leaving the drippings.
    • Add the chopped onion to the pot with the bacon drippings and cook until soft, approximately 5 minutes, stirring occasionally.
    • Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn the garlic.
    • Pour in the chicken broth and bring to a simmer, then add the half-and-half. Heat through, but do not allow it to boil.
    • Add the gnocchi and cook until they float to the surface, around 3-4 minutes, indicating they are cooked through.
    • Stir in the shredded cheddar cheese until fully melted and incorporated into the soup. Season with salt and pepper to taste.
    • Crumble the cooked bacon and add it back to the soup. Garnish the soup with chopped chives before serving.
