    Ingredients

    • 1 whole rotisserie chicken

    • 8 cups chicken broth

    • 2 cups carrots, sliced

    • 1 cup celery, sliced

    • 1 medium onion, chopped

    • 2 cloves garlic, minced

    • 1 teaspoon thyme

    • 3/4 cup egg noodles

    • to taste salt and pepper

    • 2 tablespoons olive oil

    Directions

    • Remove meat from the rotisserie chicken and shred it into bite-sized pieces, discarding skin and bones.
    • In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, celery, and carrots, and sauté until the vegetables are tender.
    • Pour in the chicken broth and bring to a boil. Add the thyme, chicken, and egg noodles, and reduce the heat to simmer.
    • Cook the soup for about 15 minutes or until the noodles are soft. Stir occasionally to prevent the noodles from sticking.
    • Season the soup with salt and pepper according to your taste before serving. Enjoy hot.
