    Ingredients

    • 2 pieces chicken breasts

    • 0.5 cup all-purpose flour

    • 0.25 teaspoon salt

    • 0.25 teaspoon black pepper

    • 2 tablespoons olive oil

    • 1 tablespoon butter

    • 0.5 cup chicken broth

    • 0.25 cup lemon juice

    • 2 tablespoons capers

    • 2 tablespoons parsley

    Directions

    • Pound chicken breasts to about half an inch thick between two pieces of plastic wrap, ensuring even thickness throughout.
    • Mix flour, salt, and pepper on a plate, and coat each chicken breast fully with the flour mixture on both sides.
    • Heat olive oil in a large skillet over medium-high heat, adding chicken when oil is hot and cooking until golden brown.
    • Remove chicken from skillet, and in the same skillet, melt butter over medium heat before pouring in chicken broth and lemon juice.
    • Allow sauce to simmer and thicken slightly before returning chickens to the skillet and cooking for 5 minutes, turning once.
    • Add capers and parsley, stirring them into the sauce and simmering for another minute before serving hot.
