Roasted Garlic White Chicken Lasagna Soup

Healthy Fact of the Day

Roasting garlic mellows its sharpness and enhances its natural sweetness while preserving beneficial compounds. Chicken provides lean protein, and the milk adds calcium for bone health.

This Roasted Garlic White Chicken Lasagna Soup transforms the beloved Italian comfort food into a soul-warming bowl that’s perfect for chilly days. The roasted garlic adds deep, mellow sweetness that infuses every spoonful, while tender chicken and broken lasagna noodles swim in a rich, creamy Parmesan broth. It delivers all the satisfying flavors of traditional lasagna without the layering and long bake time, making it ideal for busy weeknights when you crave something special.

If you love creamy, comforting soups with bold flavors, try our Cheesy Southwestern Chicken Tortilla Soup for another hearty bowl with tender chicken and rich, satisfying broth. For a different but equally indulgent approach, our Loaded Potato Soup offers that same creamy comfort with hearty, stick-to-your-ribs appeal.

    Ingredients

    • 1 head garlic

    • 1 lb chicken breast

    • 2 tbsp olive oil

    • 1 cup chopped onion

    • 1 cup sliced mushrooms

    • 4 cups chicken broth

    • 3 cups milk

    • 8 oz broken lasagna noodles

    • 1 cup Parmesan cheese

    • 1 cup heavy cream

    • 2 tbsp chopped fresh parsley

    • 1 tsp dried oregano

    • 0.5 tsp black pepper

    • 1 tsp salt

    Directions

    • Preheat oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, and wrap in foil. Roast in the oven for about 30 minutes until cloves are soft.
    • In a large pot, heat remaining olive oil over medium heat. Add chopped onion and sliced mushrooms. Sauté for about 5 minutes until soft and fragrant.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!
