1 head garlic
1 lb chicken breast
2 tbsp olive oil
1 cup chopped onion
1 cup sliced mushrooms
4 cups chicken broth
3 cups milk
8 oz broken lasagna noodles
1 cup Parmesan cheese
1 cup heavy cream
2 tbsp chopped fresh parsley
1 tsp dried oregano
0.5 tsp black pepper
1 tsp salt
Directions
- Preheat oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, and wrap in foil. Roast in the oven for about 30 minutes until cloves are soft.
- In a large pot, heat remaining olive oil over medium heat. Add chopped onion and sliced mushrooms. Sauté for about 5 minutes until soft and fragrant.
- Add chicken breast to the pot and cook until browned on all sides. Pour in chicken broth and bring to a boil, then reduce heat to a simmer.
- Mash the roasted garlic cloves into a paste. Add to the pot along with milk and broken lasagna noodles. Cook until noodles are al dente.
- Stir in Parmesan cheese and heavy cream. Cook for an additional 5 minutes, stirring frequently until cheese is melted and soup is creamy.
- Season with salt, black pepper, and oregano. Garnish with chopped fresh parsley before serving.
