    Ingredients

    • 1 pound shrimp, peeled and deveined

    • 2 tablespoons olive oil

    • 3 cloves garlic, minced

    • 1 teaspoon cumin

    • 1/2 teaspoon paprika

    • 1/4 teaspoon red pepper flakes

    • 1 lime, juiced

    • 1/4 cup fresh cilantro, chopped

    • 8 corn tortillas

    • 1 cup shredded lettuce

    • 1/2 cup cherry tomatoes, sliced

    • 1/4 cup sour cream

    Directions

    • In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute until fragrant.
    • Add shrimp to the skillet, and season with cumin, paprika, and red pepper flakes. Cook shrimp until pink and opaque throughout.
    • Squeeze lime juice over the cooked shrimp, and toss with cilantro until well coated and evenly distributed.
    • Heat corn tortillas in a pan over medium heat for about 30 seconds on each side or until warm and pliable.
    • Assemble tacos by placing shrimp onto each tortilla, and top with shredded lettuce, sliced cherry tomatoes, and a dollop of sour cream.
