Pulled Pork Enchiladas

Healthy Fact of the Day

Pork provides high-quality protein and B vitamins, particularly thiamine and niacin, which support energy metabolism. Using cumin and smoked paprika adds antioxidants and anti-inflammatory compounds while boosting flavor.

These Pulled Pork Enchiladas transform leftover pulled pork into something completely new and exciting, with tender, smoky meat wrapped in soft tortillas and smothered in rich enchilada sauce. The combination of cumin and smoked paprika adds depth to the pork while the melted cheese creates that irresistible golden, bubbly top. It’s the perfect way to give pulled pork a Mexican makeover that the whole family will love.

    Ingredients

    • 1 pound pulled pork

    • 1 cup enchilada sauce

    • 8 tortillas

    • 1 cup shredded cheese

    • 0.5 cup sour cream

    • 0.25 cup chopped cilantro

    • 2 tablespoons olive oil

    • 1 teaspoon ground cumin

    • 0.5 teaspoon smoked paprika

    Directions

    • Preheat the oven to 375°F (190°C). Meanwhile, spread the olive oil evenly across the bottom of a 9×13 inch baking dish.
    • Mix pulled pork with cumin and smoked paprika in a bowl to evenly distribute the spices throughout the meat.
    • Place a portion of pulled pork onto each tortilla, roll them tightly, and arrange them seam side down in the prepared dish.
    • Pour the enchilada sauce evenly over the top of the rolled tortillas ensuring they are all covered with the sauce.
    • Sprinkle shredded cheese on top of the sauce-covered tortillas, ensuring an even distribution for a cheesy layer.
    • Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes until heated through and bubbly.
    • Remove the foil, increase the oven temperature to 425°F (220°C), and bake for an additional 10-15 minutes to brown the cheese.
    • Remove from the oven, allow to cool slightly, and serve with a dollop of sour cream and sprinkled cilantro.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!

Why Everything You’ve Heard About Cooking Eggs Is Incomplete

Eggs are one of the few dietary sources of choline, a nutrient essential for brain health, liver function, and fetal neural development during pregnancy. A single large egg contains roughly 147 milligrams of choline — primarily in the yolk — contributing meaningfully toward the recommended daily intake of 425 to 550 milligrams for most adults. Despite decades of concern over dietary cholesterol, current nutritional research increasingly supports eggs as a whole-food protein source with significant micronutrient value.

    Lemon Herb Roasted Chicken

A whole roasted chicken is one of the most nutritionally complete and economical proteins you can put on the table—delivering high-quality protein, B vitamins, zinc, and selenium across both white and dark meat. Roasting rather than frying keeps the preparation lean and lets the natural flavors of the lemon and herbs do all the work, making this Sunday classic as nourishing as it is deeply satisfying.

Nutella Just Released Its First New Flavor in Over 60 Years — And It’s Available Now

Nut-based spreads like Nutella Peanut can be a satisfying addition to meals and snacks, but they’re calorie-dense, so portion size matters. A thin spread on whole grain toast or a small drizzle over fruit is all you need to get the flavor payoff — using a spoon to measure rather than spreading straight from the jar is an easy way to keep portions in check. Pairing it with high-fiber foods like apple slices or whole grain crackers also helps slow digestion and keeps you feeling full longer.
