    Ingredients

    • 2 pounds chicken thighs

    • 1 cup shoyu (soy sauce)

    • 0.5 cup water

    • 0.5 cup brown sugar

    • 0.25 cup honey

    • 4 cloves garlic, minced

    • 1 tbsp grated ginger

    • 0.5 tsp black pepper

    • 2 tbsp cornstarch

    • 2 tbsp water

    Directions

    • In a large pot, combine shoyu, water, brown sugar, honey, minced garlic, grated ginger, and black pepper. Stir well to mix the ingredients thoroughly.
    • Add the chicken thighs to the pot, ensuring they are fully submerged in the shoyu mixture.
    • Bring the pot to a boil over medium-high heat, then reduce to a simmer. Allow the chicken to cook for about 30 minutes.
    • In a small bowl, mix the cornstarch with water to create a smooth slurry. Gradually add this mixture to the simmering chicken, stirring continuously.
    • Continue cooking over low heat for an additional 15 minutes, or until the sauce thickens and coats the chicken.
    • Remove the pot from heat and let the chicken rest for a few minutes before serving.
