    Ingredients

    • 2 cans corn, drained

    • 1 cup mayonnaise

    • 1 cup shredded cheddar cheese

    • 1 cup green bell pepper, diced

    • 1/2 cup red onion, finely chopped

    • 1/2 cup Fritos chips, crushed

    • 1 tablespoon lime juice

    • 1 teaspoon salt

    • 1/2 teaspoon black pepper

    Directions

    • In a large mixing bowl, combine the drained corn, mayonnaise, shredded cheddar cheese, diced green bell pepper, and finely chopped red onion. Mix well until all ingredients are evenly distributed.
    • Add the lime juice, salt, and black pepper to the mixture. Stir thoroughly to ensure the dressing is evenly incorporated with the vegetables.
    • Just before serving, fold in the crushed Fritos chips to maintain their crunchiness. Serve immediately for the best texture and flavor.
