    Ingredients

    • 1 pound ground beef

    • 1 large onion, chopped

    • 2 cloves garlic, minced

    • 1 can black beans, drained and rinsed

    • 1 can corn, drained

    • 1 can diced tomatoes, undrained

    • 1 can green chiles, chopped

    • 1 tablespoon chili powder

    • 1 teaspoon cumin

    • 1 cup masa harina

    • 1 cup chicken broth

    • 2 cups cheddar cheese, shredded

    • 1 large egg

    • 1/2 cup milk

    Directions

    • Preheat the oven to 375 degrees Fahrenheit. Grease a large baking dish to prevent sticking and set aside.
    • In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is tender.
    • Stir in black beans, corn, diced tomatoes, green chiles, chili powder, and cumin into the skillet. Allow the mixture to simmer for about 5 minutes.
    • In a separate bowl, mix together masa harina, chicken broth, and egg. Stir until a smooth batter forms.
    • Spread the beef mixture into the prepared baking dish, and evenly pour the masa harina batter over the top.
    • Bake in the preheated oven for 25 minutes until the masa layer is set and lightly browned.
    • Remove from the oven and sprinkle cheddar cheese on top. Return to the oven for an additional 10 minutes until the cheese is melted.
    • Allow the casserole to cool for a few minutes before serving. Enjoy your flavorful tamale casserole!
