Gourmet Seafood Cassolette

Healthy Fact of the Day

Use half-and-half instead of heavy cream to lighten the sauce, and load up on extra mushrooms to add volume and nutrients without extra calories.

Gourmet Seafood Cassolette elevates weeknight dining with its luxurious combination of sea scallops and shrimp bathed in a silky wine-cream sauce. This French-inspired dish features tender mushrooms and garlic, all baked to bubbly perfection in individual ramekins or one elegant casserole. Pour a crisp Sancerre or buttery Viognier—their bright acidity cuts through the cream while complementing the sweet seafood.

Transform this into a spectacular dinner party spread with Garlic Rosemary Focaccia Muffins for soaking up every drop of that divine cream sauce. Round out the meal with Mediterranean Steak Bowl if you’re serving both seafood and meat lovers, or keep it ocean-focused with our Seared Scallops with Spicy Cajun Cream Sauce as an appetizer that previews the rich flavors to come.

    Ingredients

    • 1/2 cup butter

    • 1 cup heavy cream

    • 1/4 cup dry white wine

    • 1/2 pound sea scallops

    • 1/2 pound shrimp, peeled and deveined

    • 1 cup sliced mushrooms

    • 2 tablespoons all-purpose flour

    • 2 tablespoons olive oil

    • 1/2 teaspoon salt

    • 1/4 teaspoon black pepper

    • 1 teaspoon minced garlic

    • 1 teaspoon lemon juice

    • 2 tablespoons chopped parsley

    Directions

    • Preheat your oven to 350°F (175°C) to get started on the dish with proper temperature.
    • In a large skillet, melt the butter over medium heat and add the olive oil to combine fats evenly.
    • Add garlic and mushrooms to the skillet, cooking until the mushrooms are tender, for about 5 minutes.
    • Sprinkle the flour over the mushroom mixture and stir continuously for 2 minutes to eliminate the raw flour taste.
    • Gradually whisk in the cream and wine, simmering until the mixture thickens and becomes velvety smooth.
    • Add scallops and shrimp to the skillet, stirring gently to coat with the sauce.
    • Season the seafood mixture with salt, pepper, and lemon juice, then remove from heat.
    • Transfer the mixture into an oven-proof casserole dish and bake in preheated oven for 20 minutes.
    • Remove the cassolette from the oven and garnish with chopped parsley before serving.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!
