1 lb shrimp, peeled and deveined
1 tbsp olive oil
1 medium onion, thinly sliced
1 medium bell pepper, thinly sliced
2 cloves garlic, minced
1 medium tomato, diced
1 tsp chili powder
1 cup cheddar cheese, shredded
8 small flour tortillas
to taste salt and pepper
1/4 cup cilantro, chopped
1 lime cut into wedges
Directions
- Heat the olive oil in a skillet over medium heat and sauté the onion and bell pepper until softened, about 5 to 6 minutes.
- Add the garlic and diced tomato to the skillet, cooking and stirring until the tomatoes start to break down, about 2 to 3 minutes.
- Add the shrimp to the skillet and sprinkle with chili powder, salt, and pepper. Cook until the shrimp turns pink, approximately 4 minutes.
- Remove the shrimp mixture from the skillet and wipe clean. Place a tortilla in the skillet over medium heat.
- Sprinkle some cheese on half of the tortilla, add some shrimp mixture, more cheese, and fold the tortilla in half.
- Cook the taco until the cheese melts and both sides are golden brown, about 3 minutes per side.
- Repeat with the remaining tortillas, adding more cheese and shrimp mixture. Serve with cilantro and lime wedges.
