    Ingredients

    • 1 lb shrimp, peeled and deveined

    • 1 tbsp olive oil

    • 1 medium onion, thinly sliced

    • 1 medium bell pepper, thinly sliced

    • 2 cloves garlic, minced

    • 1 medium tomato, diced

    • 1 tsp chili powder

    • 1 cup cheddar cheese, shredded

    • 8 small flour tortillas

    • to taste salt and pepper

    • 1/4 cup cilantro, chopped

    • 1 lime cut into wedges

    Directions

    • Heat the olive oil in a skillet over medium heat and sauté the onion and bell pepper until softened, about 5 to 6 minutes.
    • Add the garlic and diced tomato to the skillet, cooking and stirring until the tomatoes start to break down, about 2 to 3 minutes.
    • Add the shrimp to the skillet and sprinkle with chili powder, salt, and pepper. Cook until the shrimp turns pink, approximately 4 minutes.
    • Remove the shrimp mixture from the skillet and wipe clean. Place a tortilla in the skillet over medium heat.
    • Sprinkle some cheese on half of the tortilla, add some shrimp mixture, more cheese, and fold the tortilla in half.
    • Cook the taco until the cheese melts and both sides are golden brown, about 3 minutes per side.
    • Repeat with the remaining tortillas, adding more cheese and shrimp mixture. Serve with cilantro and lime wedges.
