    • 1 pound pulled pork

    • 1 cup enchilada sauce

    • 8 tortillas

    • 1 cup shredded cheese

    • 0.5 cup sour cream

    • 0.25 cup chopped cilantro

    • 2 tablespoons olive oil

    • 1 teaspoon ground cumin

    • 0.5 teaspoon smoked paprika

    Directions

    • Preheat the oven to 375°F (190°C). Meanwhile, spread the olive oil evenly across the bottom of a 9×13 inch baking dish.
    • Mix pulled pork with cumin and smoked paprika in a bowl to evenly distribute the spices throughout the meat.
    • Place a portion of pulled pork onto each tortilla, roll them tightly, and arrange them seam side down in the prepared dish.
    • Pour the enchilada sauce evenly over the top of the rolled tortillas ensuring they are all covered with the sauce.
    • Sprinkle shredded cheese on top of the sauce-covered tortillas, ensuring an even distribution for a cheesy layer.
    • Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes until heated through and bubbly.
