- Chicken Fajita Pasta
Ingredients
- 1 lb penne pasta
- 2 lbs chicken breasts, sliced
- 3 bell peppers (mixed colors), sliced
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 1/2 cup heavy cream
- 1 cup chicken broth
- 2 tbsp fajita seasoning
- 2 tbsp olive oil
- 2 tbsp butter
- 1 lime, juiced
- 1 cup Mexican cheese blend, shredded
For garnish:
- Fresh cilantro, chopped
- Sliced avocado
- Sour cream
- Extra lime wedges
- Red pepper flakes
Instructions
- Cook pasta according to package directions.
- Reserve 1 cup pasta water.
- Season sliced chicken with half the fajita seasoning.
- Heat olive oil in a large skillet over high heat.
- Cook chicken until golden, about 5-6 minutes. Remove and set aside.
- In same skillet, add butter, peppers, and onions.
- Cook until vegetables are slightly charred but still crisp.
- Add garlic and remaining fajita seasoning.
- Pour in chicken broth, scraping up brown bits.
- Add cream and cherry tomatoes.
- Return chicken to pan, simmer until sauce thickens.
- Add cooked pasta, tossing to coat.
- Stir in cheese and lime juice.
- Add pasta water if needed for desired consistency.
