Instructions

  1. Heat olive oil in a large cast-iron skillet over medium heat.

  2. Add diced sweet potatoes, cook for 5-7 minutes until they start to soften.

  3. Add chorizo, breaking it up with a wooden spoon.

  4. Cook for 5 minutes.

  5. Stir in onion and bell pepper. Cook for another 3-4 minutes.

  6. Sprinkle in smoked paprika and cumin. Stir to combine.

  7. Drizzle maple syrup over the mixture, stirring to coat evenly.

  8. Make 4 wells in the mixture and crack an egg into each.

  9. Cover the skillet and cook for 5-6 minutes, or until eggs are set to your liking.

  10. Season with salt and pepper.

  11. Garnish with green onions and cilantro.

  12. Serve hot, with avocado slices and hot sauce if desired.
