    Ingredients

    • 1.5 cups graham cracker crumbs

    • 0.5 cups unsalted butter

    • 0.25 cups granulated sugar

    • 4 large egg yolks

    • 1 can sweetened condensed milk

    • 0.75 cups key lime juice

    • 1 tablespoon lime zest

    Directions

    • Preheat your oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper, leaving an overhang on the sides to lift the bars out easily when cooled.
    • In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until the mixture resembles wet sand.
    • Press the graham cracker mixture firmly into the bottom of the prepared baking dish, creating an even layer, and bake for 10 minutes until lightly golden.
    • While the crust is baking, prepare the filling by whisking together the egg yolks, sweetened condensed milk, key lime juice, and lime zest in a large bowl until smooth and well combined.
    • Once the crust has finished baking, pour the lime mixture over it, spreading evenly with a spatula, and bake for an additional 15 minutes.
    • Remove from the oven and let the bars cool to room temperature before refrigerating them for at least 2 hours or until fully set.
    • Once chilled, use the parchment paper overhang to lift the bars out of the dish, slice into squares, and serve chilled.
