    Ingredients

    • 4 pieces chicken breasts

    • 1 cup salsa verde

    • 4 slices pepper jack cheese

    • 1 tablespoon olive oil

    • 1 teaspoon garlic powder

    • 1/2 teaspoon salt

    • 1/2 teaspoon black pepper

    Directions

    • Preheat grill to medium-high heat, around 375°F to 400°F. Clean and oil the grill grates to prevent sticking.
    • In a small bowl, combine olive oil, garlic powder, salt, and black pepper. Brush this mixture over both sides of the chicken breasts evenly.
    • Place the chicken breasts on the grill and cook for 5-6 minutes per side or until fully cooked and internal temperature reaches 165°F.
    • During the last 2 minutes of grilling, top each chicken breast with a slice of pepper jack cheese to allow it to melt slightly.
    • Once cooked, remove the chicken from the grill and let it rest for a few minutes on a cutting board before serving.
    • Serve the grilled chicken topped with a generous amount of salsa verde and garnish with fresh cilantro if desired.
