    Ingredients

    • 2 pounds potatoes

    • 1 whole onion

    • 1/4 cup flour

    • 2 whole eggs

    • 1/2 teaspoon salt

    • 0.25 teaspoon black pepper

    • 1/4 cup vegetable oil

    Directions

    • Peel and grate the potatoes using a box grater or food processor. Drain excess liquid from the grated potatoes using a clean towel or cheesecloth.
    • Finely chop the onion and add to the drained potatoes. Mix well to combine the grated potatoes and chopped onion.
    • In a large mixing bowl, beat the eggs and add flour, salt, and pepper. Stir until the mixture is smooth and even.
    • Combine the grated potato mixture with the egg mixture. Ensure that the potatoes are evenly coated with the egg and flour mixture.
    • Heat vegetable oil in a large skillet over medium heat until hot. Drop spoonfuls of the potato mixture into the hot oil, flattening them gently with a spatula.
    • Fry the pancakes for about 3-4 minutes on each side until golden brown. Adjust heat as necessary to prevent burning.
    • Once cooked, remove the pancakes from the skillet and drain on paper towels. Serve hot with applesauce or sour cream if desired.
