    Ingredients

    • 1 lb ground beef

    • 1 packet taco seasoning

    • 1 cup salsa

    • 1 can (15 oz) black beans, drained and rinsed

    • 1 cup corn kernels

    • 2 cups shredded cheddar cheese

    • 1 bag (14 oz) tortilla chips, slightly crushed

    Directions

    • In a large skillet, brown the ground beef over medium heat, breaking it into small pieces with a spatula.
    • Once the beef is cooked, drain any excess grease and stir in taco seasoning until the beef is evenly coated.
    • In the crockpot, layer half of the tortilla chips to create a base for the casserole.
    • Add the cooked seasoned beef over the layer of chips, spreading it evenly.
    • Pour the salsa over the beef, spreading it to cover all areas, followed by spreading black beans on top.
    • Add a layer of corn kernels, spreading them over the beans, then sprinkle one cup of shredded cheddar cheese.
    • Repeat the layers with the remaining tortilla chips, beef mixture, and another layer of cheese.
    • Cover the crockpot, set it to low heat, and cook for 4 hours or until cheese is fully melted and bubbly.
    • Optional: Once cooked, garnish with chopped fresh cilantro or sliced jalapeños before serving, if desired.
