    • 2 tablespoons brown sugar

    • 1 teaspoon baking powder

    • 0.5 teaspoon baking soda

    • 0.25 teaspoon salt

    • 1 cup milk

    • 1 large egg

    • 2 ripe bananas, mashed

    • 2 tablespoons melted butter

    • 0.5 teaspoon vanilla extract

    Directions

    • In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt until well combined.
    • In another bowl, combine the milk, egg, mashed bananas, melted butter, and vanilla extract, mixing until smooth.
    • Create a well in the dry ingredients and pour in the banana mixture, stirring gently until only just combined.
    • Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake onto the skillet.
