1 cup onion, chopped
3 cloves garlic, minced
4 cups chicken broth
2 cups half-and-half
16 oz gnocchi
2 cups cheddar cheese, shredded
1 tsp salt
1 tsp pepper
2 tbsp chives, chopped
Directions
- In a large pot, cook the bacon over medium heat until crispy, about 8 minutes. Remove bacon and set aside, leaving the drippings.
- Add the chopped onion to the pot with the bacon drippings and cook until soft, approximately 5 minutes, stirring occasionally.
- Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn the garlic.
- Pour in the chicken broth and bring to a simmer, then add the half-and-half. Heat through, but do not allow it to boil.
- Add the gnocchi and cook until they float to the surface, around 3-4 minutes, indicating they are cooked through.
