    • 1/2 cup mushrooms, finely chopped

    • 1/4 cup onion, finely chopped

    • 1 tablespoon butter

    • 1 egg, beaten

    • 1 tablespoon olive oil

    • 1/2 teaspoon salt

    • 1/4 teaspoon black pepper

    • 1 teaspoon dijon mustard

    • 1 sheet of puff pastry, thawed

    Directions

    • Preheat your oven to 400°F (200°C) to ensure it’s hot enough to cook the turnovers evenly.
    • Heat olive oil and butter in a skillet over medium heat, then sauté mushrooms and onion until softened.
    • Add beef tenderloin pieces to the skillet, cooking until browned on all sides but not fully cooked through.
