    Ingredients

    • 4 pieces chicken breasts

    • 1 cup salsa verde

    • 4 slices pepper jack cheese

    • 1 tablespoon olive oil

    • 1 teaspoon garlic powder

    • 1/2 teaspoon salt

    • 1/2 teaspoon black pepper

    Directions

    • Preheat grill to medium-high heat, around 375°F to 400°F. Clean and oil the grill grates to prevent sticking.
    • In a small bowl, combine olive oil, garlic powder, salt, and black pepper. Brush this mixture over both sides of the chicken breasts evenly.
    • Place the chicken breasts on the grill and cook for 5-6 minutes per side or until fully cooked and internal temperature reaches 165°F.
    • During the last 2 minutes of grilling, top each chicken breast with a slice of pepper jack cheese to allow it to melt slightly.
    • Once cooked, remove the chicken from the grill and let it rest for a few minutes on a cutting board before serving.
    • Serve the grilled chicken topped with a generous amount of salsa verde and garnish with fresh cilantro if desired.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!

The Last Days of Summer: How to Eat Before It’s Gone

The final weeks of summer produce represent a nutritional opportunity that is worth acting on specifically — because the peak-season produce that is most abundant and most flavorful right now is also at its highest concentration of vitamins, antioxidants, and phytonutrients. Research on produce nutritional quality consistently finds that the gap between peak-season and out-of-season nutritional content is widest in the summer vegetables and fruits — tomatoes, peaches, corn, peppers — that define the late summer abundance. Eating these foods now, and preserving them in forms that retain their nutritional value, is both a culinary and nutritional investment in the months that follow.
