    • 0.5 tsp salt

    • 0.5 tsp pepper

    • Begin by boiling the pasta in a large pot of salted water until al dente. Drain and set aside the pasta while you prepare the sauce.
    • In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about five minutes.
    • Stir in the minced garlic and cook briefly until fragrant, then add the sun-dried tomatoes and chopped spinach. Cook until the spinach is wilted.
    • Sprinkle the flour over the vegetables in the skillet. Stir constantly to coat the vegetables evenly, cooking for about two minutes.
    • Gradually add the milk to the skillet, whisking continuously to avoid lumps. Cook until the sauce begins to thicken, about five minutes.
    • Reduce the heat to low and add the shredded mozzarella and grated Parmesan cheese. Stir until the cheeses are completely melted and the sauce is smooth.
