Tomatoes With Creamy Feta

Ingredients

 

  • 4 large ripe tomatoes
  • 8 oz feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tbsp extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh mint, chopped
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • Salt and freshly ground black pepper to taste
  • 2 tbsp toasted pine nuts
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Cut tomatoes into thick slices and arrange on a serving platter.

  2. In a bowl, mix crumbled feta, Greek yogurt, minced garlic, dill, mint, lemon zest, and lemon juice.

  3. Mash the mixture with a fork until well combined but still slightly chunky.

  4. Season with salt and pepper to taste.

  5. Spoon the feta mixture over the tomato slices.

  6. Drizzle with extra-virgin olive oil.

  7. Sprinkle toasted pine nuts over the top.

  8. If desired, finish with a light drizzle of balsamic glaze.

  9. Serve immediately as a refreshing appetizer or side dish.
