3 pounds beef short ribs
2 tablespoons olive oil
1 unit large onion, chopped
3 cloves garlic, minced
2 cups red wine
1 can 28 ounces diced tomatoes
1 cup beef broth
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 pounds potatoes, peeled and cubed
0.5 cup milk
0.5 cup Parmesan cheese, grated

Directions
- Preheat oven to 325°F (165°C). Season short ribs with salt and pepper, then brown them in olive oil in a large oven-safe pot.
- Remove ribs and sauté onion and garlic in the same pot until tender. Add red wine, diced tomatoes, beef broth, tomato paste, thyme, and rosemary.
- Return ribs to the pot, bring to a simmer, cover, and transfer to the oven. Cook for about 4 hours until the meat is tender.
- While the ragu is cooking, boil potatoes in a large pot until tender. Drain and mash with milk and Parmesan cheese until smooth.
- Season the mashed potatoes with salt and pepper to taste. Once the ragu is ready, serve it over the Parmesan mashed potatoes.
