    Ingredients

    • 4 large baking potatoes

    • 0.5 cup sour cream

    • 1.25 cup shredded cheddar cheese

    • 4 slices bacon, cooked and crumbled

    • 0.5 cup chopped green onions

    • 4 tablespoons butter

    • 0.25 teaspoon salt

    • 0.25 teaspoon pepper

    Directions

    • Preheat the oven to 400°F (200°C) and thoroughly scrub the potatoes to remove any dirt or residue.
    • Prick each potato several times with a fork to allow steam to escape and place them directly on the oven rack.
    • Bake the potatoes for approximately 45-50 minutes, or until they are tender when pierced with a fork.
    • Remove potatoes from the oven and reduce oven temperature to 350°F (175°C). Allow potatoes to cool slightly.
    • Cut each potato in half lengthwise and carefully scoop out the flesh into a mixing bowl, leaving a thin shell.
    • Mash the potato flesh with butter, sour cream, salt, and pepper until smooth and creamy.
    • Stir in 1 cup of the shredded cheddar cheese, bacon, and half of the chopped green onions into mashed potatoes.
    • Spoon the potato mixture back into the potato shells, mounding it slightly in the center of each potato.
    • Place stuffed potatoes on a baking sheet and top each with the remaining shredded cheese.
    • Bake for an additional 15 minutes until the cheese is melted and the potatoes are heated through.
    • Garnish with remaining green onions before serving and enjoy the delicious cheesy potatoes.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!
