Breakfast Fiesta Wrap

These breakfast fiesta wraps are packed with protein from the eggs and black beans, as well as fiber and nutrients from the vegetables. Using whole wheat tortillas can add extra fiber and complex carbohydrates to keep you feeling full and energized throughout the morning.

Ingredients

 

  • 4 large flour tortillas
  • 8 large eggs
  • 1/4 cup milk
  • 1 tbsp butter
  • 1 cup cooked black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 red bell pepper, diced
  • 1/2 cup diced red onion
  • 1 jalapeño pepper, seeded and minced (optional)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and freshly ground black pepper to taste
  • Salsa and sour cream for serving

 

Instructions

  1. In a large bowl, whisk together the eggs and milk until well combined. Season with salt and black pepper.
  2. Melt the butter in a large skillet over medium heat. Pour in the egg mixture and scramble until cooked to your liking. Remove from heat and set aside.
  3. In the same skillet, sauté the black beans, corn, diced bell pepper, red onion, and jalapeño (if using) until the vegetables are tender and lightly charred, about 5-7 minutes.
  4. Warm the tortillas in the microwave for 20-30 seconds to make them more pliable.
  5. To assemble the wraps, divide the scrambled eggs, sautéed vegetable mixture, shredded cheese, and chopped cilantro evenly among the four tortillas, placing the fillings in the center of each tortilla.
  6. Fold the sides of the tortilla over the filling, then roll tightly from the bottom up to create a secure wrap.
  7. Serve the breakfast fiesta wraps hot, with salsa and sour cream on the side for dipping.
