Mushroom Stuffed Chicken

Healthy Fact of the Day

Mushrooms are low in calories and high in antioxidants. For a leaner option, use part-skim cheese and serve with roasted veggies for a balanced plate.

This Mushroom Stuffed Chicken transforms ordinary chicken breasts into an elegant, restaurant-quality dish that’s surprisingly simple to make at home. Tender chicken is carefully filled with a savory mixture of sautéed mushrooms, fragrant garlic, and rich Parmesan cheese, then seasoned with aromatic thyme and baked until golden and juicy. Ingredients

    • 1 lb chicken breasts

    • 8 oz mushrooms

    • 1 tbsp olive oil

    • 2 cloves garlic

    • 0.25 cup Parmesan cheese

    • 0.5 tsp salt

    • 0.25 tsp black pepper

    • 0.5 tsp thyme

    Directions

    • Preheat the oven to 375 degrees Fahrenheit and prepare a baking dish by lightly greasing it with oil or cooking spray.
    • Finely chop the mushrooms and garlic, then sauté them in olive oil over medium heat until the mushrooms are soft and the garlic is fragrant.
    • Mix the sautéed mushrooms with Parmesan cheese, thyme, salt, and black pepper in a bowl, ensuring all ingredients are well combined.
    • Carefully cut a pocket in each chicken breast and stuff them with an equal amount of the mushroom mixture, securing with toothpicks if necessary.
    • Place stuffed chicken breasts in the prepared baking dish and cover with aluminum foil to keep them moist during baking.
    • Bake the chicken in the preheated oven for about 30 to 40 minutes, or until the chicken is cooked through and the cheese is melted.
    • Remove the foil for the last 10 minutes of baking to allow the top to turn golden brown and the chicken to fully cook.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!
