Starbucks Reveals Its Summer 2026 Menu — And It’s Heavy on Tropical and Horchata Flavors

The drink’s standout feature is its vivid purple color, which comes from a splash of butterfly pea flower infusion — a natural ingredient that gives the beverage its distinctive look without artificial dyes.

Like other Starbucks Refreshers, it can be customized with water, coconut milk, or lemonade as the base depending on preference — each option shifts the flavor profile slightly while keeping the tropical core intact.

The popping pearls are worth noting as a textural detail: they deliver small bursts of mango-pineapple flavor as you drink, adding a layer of fun to what’s already a visually striking cup.

The Returning Favorite and New Addition: Horchata Drinks

Alongside the new Refresher, Starbucks is bringing back the Iced Horchata Shaken Espresso for a limited time. The drink uses Starbucks Blonde Espresso and horchata syrup, shaken with ice and topped with oat milk. It draws on the flavors of Mexican-style horchata — cinnamon, vanilla, and subtle toasted rice — in a format that bridges the familiar comfort of the classic beverage with an espresso kick.

New this year is the Horchata Frappuccino, a blended version of the same flavor profile designed for peak summer heat. It’s the first time Starbucks has offered a Frappuccino built around horchata flavors, giving fans of the shaken espresso an icy alternative for warmer days.

The Returning Treat: Unicorn Cake Pop

The Unicorn Cake Pop is also making its summer return. The treat features vanilla cake mixed with confetti sprinkles, dipped in white chocolatey icing and decorated with a hand-crafted unicorn face design. It’s as much a visual experience as a food one — and based on its past reception, it tends to sell out quickly once the season gets going.

New Merchandise: Road Trip Collection and Miffy Collaboration

Beyond the food and beverage menu, Starbucks is also launching two new merchandise collections this summer.

The Road Trip Collection, available starting May 12, is themed around summer travel and includes mugs, tumblers, a canvas mini tote bag, and a foldable picnic blanket — all designed around the aesthetic of a classic summer road trip.

Starting May 19, Starbucks will roll out a limited-edition collaboration with Miffy, the beloved Dutch cartoon rabbit created by artist Dick Bruna. The Miffy x Starbucks line includes drinkware and lifestyle accessories available at U.S. and Canadian locations.
