    Ingredients

    • 1 cup sauerkraut

    • 0.5 cup diced corned beef

    • 1 cup shredded Swiss cheese

    • 1/4 cup all-purpose flour

    • 2 pcs eggs

    • 1/2 cup breadcrumbs

    • 1/4 teaspoon black pepper

    • 1 cup mayonnaise

    • 1/4 cup ketchup

    • 2 tablespoons hot sauce

    • 1 tablespoon pickle relish

    • 1/2 cup vegetable oil

    Directions

    • Preheat oil in a deep-frying pan to 350°F. Make sure you use enough oil to fully immerse the Reuben balls.
    • In a large bowl, mix sauerkraut, corned beef, Swiss cheese, flour, one egg, and black pepper until combined.
    • Shape the mixture into small balls, approximately 1.5 inches in diameter, ensuring each ball is tightly packed.
    • Whisk the remaining egg in a separate bowl and put breadcrumbs on a plate for coating each Reuben ball.
    • Dip each ball into the beaten egg, then roll it in breadcrumbs, making sure they are coated evenly.
    • Fry the balls in preheated oil for around 3 to 5 minutes or until golden brown. Use a slotted spoon to remove.
    • Place the fried balls on a plate lined with paper towels to absorb excess oil. Allow them to cool slightly.
    • For the dressing, combine mayonnaise, ketchup, hot sauce, and pickle relish in a small bowl. Mix until smooth.
    • Serve the fried Reuben balls with the spicy Thousand Island dressing on the side for dipping.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!

Pairing it with roasted tomatoes, fresh herbs, or sliced fruit keeps the meal balanced and flavorful without adding much sugar or processed ingredients. It’s the kind of versatile, whole-food ingredient that earns its place in a healthy weekly rotation.

The Ingredients That Changed the World

The Andean potato — in its hundreds of original varieties, cultivated by Indigenous farmers over thousands of years — contains a significantly more diverse nutritional profile than the handful of varieties dominant in modern commercial agriculture. The genetic diversity that existed in the original Andean crop, which was lost in the move toward agricultural monoculture, is now the subject of active preservation efforts by seed banks and agricultural scientists who recognize that dietary and agricultural diversity is one of the most important buffers against the kind of catastrophic crop failure that the Irish Famine demonstrated.
