    Ingredients

    • 4 pieces red snapper fillets

    • 2 tablespoons olive oil

    • 1 medium onion, diced

    • 1 medium bell pepper, diced

    • 2 cloves garlic, minced

    • 1 can tomato sauce (15 ounces)

    • 1 cup chicken broth

    • 1/2 teaspoon dried thyme

    • 1/2 teaspoon paprika

    • 1/4 teaspoon cayenne pepper

    • 2 tablespoons parsley, chopped

    Directions

    • Preheat oven to 375°F (190°C). Pat the red snapper fillets dry with paper towels and season both sides with salt and black pepper.
    • Heat olive oil in a large pan over medium heat. Once the oil is hot, add diced onion and bell pepper, and sauté until softened.
    • Stir in minced garlic and cook for another minute until fragrant. Then add tomato sauce, chicken broth, thyme, paprika, and cayenne pepper.
    • Let the Creole sauce simmer for about 10 minutes until slightly thickened, stirring occasionally to prevent sticking.
    • Place the seasoned red snapper fillets in a baking dish. Pour the Creole sauce over the fish, ensuring each fillet is coated.
    • Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes or until the fish flakes easily with a fork.
    • Garnish the baked fish with chopped parsley before serving. Serve hot with rice or your choice of side dish.
