    Ingredients

    • 1.5 pounds chicken thighs

    • 2 cups jasmine rice

    • 3 cups chicken broth

    • 1 teaspoon salt

    • 1 teaspoon ground cumin

    • 1 tablespoon vegetable oil

    • 1 large onion, chopped

    • 3 cloves garlic, minced

    • 1 cup fresh cilantro leaves

    • 0.5 cup sour cream

    • 1 piece jalapeño, seeded and chopped

    • 2 tablespoons lime juice

    • 1 tablespoon olive oil

    Directions

    • Heat vegetable oil in a large pan over medium-high heat; sear chicken thighs until golden, about 4 minutes per side.
    • Remove chicken from the pan and set aside. In the same pan, add onion and garlic; sauté until fragrant and translucent.
    • Stir in cumin, salt, rice, and chicken broth. Bring to a boil. Return chicken to the pan, cover, and reduce heat to low.
    • Cook for 20-25 minutes, or until the chicken is cooked through and the rice is tender and fluffy. Remove from heat.
    • In a blender, combine cilantro, jalapeño, lime juice, olive oil, and sour cream; blend until smooth and creamy.
    • Serve the chicken and rice hot with the prepared green sauce drizzled on top or served on the side.
