    • 1.5 cups all-purpose flour

    • 0.5 cups granulated sugar

    • 0.5 cups unsalted butter, melted

    • 2 tablespoons cornstarch

    • 0.25 teaspoons salt

    • 1 zest of lemon

    • 1.5 cups condensed milk

    • 1/2 cups fresh lemon juice

    • 3 units large egg yolks

    Directions

    • Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
    • In a large bowl, combine flour, sugar, melted butter, cornstarch, salt, and lemon zest. Mix until uniform crumbs form and the mixture holds together when pressed.
    • Press two-thirds of the crumb mixture into the prepared baking pan, creating an even layer at the bottom. Bake for 10-12 minutes, until lightly golden.
    • Meanwhile, in another bowl, whisk together condensed milk, lemon juice, and egg yolks until well combined and smooth for the filling.
    • Pour the lemon filling over the partially baked crust, spreading evenly. Sprinkle the remaining crumb mixture over the top of the lemon filling.
    • Return the pan to the oven and bake for about 25 minutes until the topping is golden brown and the filling is set.
    • Allow the bars to cool completely in the pan on a wire rack, then refrigerate for at least 2 hours to firm up before slicing.
