Gourmet Beef Wellington Turnovers

Gourmet Beef Wellington Turnovers

Healthy Fact of the Day

Use lean beef tenderloin for less saturated fat, and try whole wheat puff pastry when available to add fiber while keeping that signature flaky texture.

Gourmet Beef Wellington Turnovers bring classic French elegance in bite-sized perfection. Tender beef tenderloin mingles with earthy sautéed mushrooms, all wrapped in golden, buttery puff pastry that delivers satisfying crunch with every bite. Pair with a medium-bodied Pinot Noir or elegant Burgundy—both wines enhance the mushroom’s earthiness without overwhelming the delicate beef.

Serve these sophisticated turnovers alongside Spinach Puffs for a varied appetizer spread, or present with Pear and Gorgonzola Flatbread to create an upscale tasting menu that showcases complementary flavors and textures.

    Ingredients

    • 1 pound beef tenderloin

    • 1/2 cup mushrooms, finely chopped

    • 1/4 cup onion, finely chopped

    • 1 tablespoon butter

    • 1 egg, beaten

    • 1 tablespoon olive oil

    • 1/2 teaspoon salt

    • 1/4 teaspoon black pepper

    • 1 teaspoon dijon mustard

    • 1 sheet of puff pastry, thawed

    Directions

    • Preheat your oven to 400°F (200°C) to ensure it’s hot enough to cook the turnovers evenly.
    • Heat olive oil and butter in a skillet over medium heat, then sauté mushrooms and onion until softened.
    • Add beef tenderloin pieces to the skillet, cooking until browned on all sides but not fully cooked through.
    • Roll out the puff pastry on a floured surface, then cut it into equal square pieces for wrapping.
    • Place a spoonful of mushroom mixture and a piece of beef onto each pastry square, then fold over.
    • Seal the edges of the pastry to ensure no filling can escape during baking, and brush with beaten egg.
    • Arrange turnovers on a baking sheet, leaving space between each, and bake in preheated oven for 20-25 minutes.
    • Check that the pastry is golden and puffed up, and serve the turnovers hot, optionally with a fresh salad.

    Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!

Finishing pasta in sauce with reserved pasta water allows you to create rich, cohesive dishes using less added butter, oil, or cream than traditional methods, and cooking pasta to proper al dente texture results in a lower glycemic response compared to overcooked pasta, helping maintain steadier blood sugar levels.
