Garlic Rosemary Beef Tenderloin

  • 1 tbsp coarse sea salt
  • 2 tsp freshly ground black pepper
  • 2 tbsp unsalted butter
  • 1 tbsp vegetable oil
  • Kitchen twine
  • Meat thermometer

Instructions

  1. Allow beef tenderloin to come to room temperature for about 1 hour before cooking.

  2. Preheat oven to 425°F (220°C).

  3. In a small bowl, mix minced garlic, chopped rosemary, olive oil, and Dijon mustard to form a paste.

  4. Pat the tenderloin dry with paper towels.

  5. Rub the garlic-rosemary paste all over the tenderloin.

  6. Sprinkle salt and pepper evenly over the meat.

  7. Tie the tenderloin with kitchen twine at 1-inch intervals to ensure even cooking.

  8. Heat a large, oven-safe skillet over high heat.

  9. Add vegetable oil and butter.

  10. Once the butter is melted and foaming, sear the tenderloin on all sides until browned, about 3-4 minutes per side.

  11. Transfer the skillet with the tenderloin to the preheated oven.

  12. Roast for about 20-25 minutes for medium-rare (internal temperature of 135°F).

  13. Remove from oven and transfer to a cutting board. Tent loosely with foil and let rest for 10 minutes.

  14. Slice against the grain and serve.
