  • 4 lbs Yukon Gold potatoes
  • 1 cup whole milk, warmed
  • 3/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 4 cloves roasted garlic
  • 2 oz cream cheese, softened
  • 2 tsp kosher salt
  • 1/2 tsp white pepper
  • 1/4 tsp nutmeg
  • Fresh chives, chopped
  • Fresh parsley, chopped
  • Extra melted butter for serving
  • Cracked black pepper

Instructions

  1. Peel and cut potatoes into even chunks.

  2. Place in cold salted water, bring to boil.

  3. Simmer until fork-tender, about 20 minutes.

  4. Meanwhile, warm milk and cream together.

  5. Drain potatoes thoroughly, return to pot.

  6. Dry potatoes over low heat for 2 minutes.

  7. Pass through ricer or mash until smooth.

  8. Add butter in stages, stirring until melted.

  9. Gradually stir in warm milk mixture.

  10. Fold in cream cheese and roasted garlic.

  11. Season with salt, pepper, and nutmeg.

  12. Whip until perfectly smooth and creamy.
