  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups half-and-half
  • 2 cups fresh spinach, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add chicken and cook until no longer pink, about 5-7 minutes.

  3. Remove and set aside.

  4. In the same pot, melt butter. Add onion, celery, and carrots. Cook until vegetables are softened, about 5 minutes.

  5. Add garlic and cook for another minute.

  6. Sprinkle flour over the vegetables and stir to combine. Cook for 1 minute.

  7. Slowly pour in chicken broth, stirring constantly to avoid lumps.

  8. Add half-and-half, thyme, rosemary, and nutmeg. Bring to a simmer.

  9. Add gnocchi and cook for 3-4 minutes until they float to the surface.

  10. Return the cooked chicken to the pot and add spinach. Cook until spinach is wilted.

  11. Season with salt and pepper to taste.

  12. Serve hot, garnished with fresh parsley.
