2 pieces chicken breasts
0.5 cup all-purpose flour
0.25 cup olive oil
3 tablespoons unsalted butter
0.5 cup chicken broth
0.25 cup fresh lemon juice
3 tablespoons capers
0.25 cup fresh parsley, chopped
to taste salt
to taste ground black pepper
Directions
- Flatten the chicken breasts to an even thickness using a meat mallet or rolling pin, then season with salt and pepper.
- Dredge each chicken breast in flour, shaking off any excess, ensuring a thin and even coating on all sides.
- Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat until sizzling.
- Cook the chicken breasts until golden brown on both sides, about 4 minutes per side, then transfer to a plate.
- In the same skillet, add chicken broth, lemon juice, and capers, scraping the bottom to release browned bits.
- Bring the sauce to a simmer and reduce slightly, about 5 minutes, then stir in the remaining tablespoon of butter.
- Return the chicken to the skillet, spooning sauce over the top, and simmer until cooked through, about 2 minutes.
- Garnish with chopped parsley before serving. Serve over pasta or with your choice of sides for a complete meal.
