  • 1/4 cup extra-virgin olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. For candied walnuts, melt sugar in a non-stick skillet over medium heat until light amber.

  2. Add butter and walnuts, stirring to coat. Cook for 2-3 minutes until walnuts are toasted.

  3. Spread walnuts on parchment paper, sprinkle with salt, and let cool completely.

  4. In a small bowl, whisk together vinegar, honey, and mustard.

  5. Slowly whisk in olive oil until emulsified. Season with salt and pepper.

  6. In a large bowl, toss mixed greens with half the dressing.

  7. Add sliced apples and dried cranberries, tossing gently.

  8. Top salad with candied walnuts and crumbled blue cheese if using.

  9. Drizzle with remaining dressing or serve on the side.

  10. Serve immediately while walnuts are still crisp.
