Maple Chorizo Breakfast Skillet

Maple Chorizo Breakfast Skillet

Healthy Fact of the Day

This Maple Chorizo Breakfast Skillet offers a mix of nutrients but is high in calories and fat. Sweet potatoes provide fiber, vitamins A and C, and complex carbohydrates. Eggs are a great source of protein and contain essential amino acids. To make it healthier, consider using lean turkey chorizo or reducing the amount of chorizo and adding more vegetables. You could also use a sugar-free maple syrup alternative to reduce sugar content. The addition of bell peppers increases vitamin C intake. While delicious, this dish is calorie-dense, so be mindful of portion sizes. Consider serving with a side of fresh fruit or a small green salad to balance the meal and increase fiber intake.

Ingredients

  • 1 lb chorizo sausage, casings removed
  • 2 medium sweet potatoes, diced
  • 1 red bell pepper, diced
  • 1 small onion, finely chopped
  • 4 large eggs
  • 1/4 cup pure maple syrup
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced (optional)
  • Hot sauce for serving (optional)

Instructions

  1. Heat olive oil in a large cast-iron skillet over medium heat.

  2. Add diced sweet potatoes, cook for 5-7 minutes until they start to soften.

  3. Add chorizo, breaking it up with a wooden spoon.

  4. Cook for 5 minutes.

  5. Stir in onion and bell pepper. Cook for another 3-4 minutes.

  6. Sprinkle in smoked paprika and cumin. Stir to combine.

  7. Drizzle maple syrup over the mixture, stirring to coat evenly.

  8. Make 4 wells in the mixture and crack an egg into each.

  9. Cover the skillet and cook for 5-6 minutes, or until eggs are set to your liking.

  10. Season with salt and pepper.

Tip of the Day

“Always let your meat rest before slicing.”

Whether you're roasting a chicken, grilling steak, or baking pork tenderloin, letting cooked meat rest for 5–10 minutes before slicing allows the juices to redistribute evenly. This simple step keeps your meat juicy and tender, ensuring every bite is flavorful and moist. Bonus: It gives you a moment to plate your sides or garnish for a perfect presentation!
