    Ingredients

    • 2 lbs smoked pulled pork

    • 2 tbsp olive oil

    • 1 medium onion, diced

    • 1 large green bell pepper, chopped

    • 3 cloves garlic, minced

    • 1 15 oz can crushed tomatoes

    • 1 15 oz can kidney beans, drained

    • 1 15 oz can black beans, drained

    • 2 tbsp chili powder

    • 1 tsp cumin

    • 1 tsp smoked paprika

    • 1 tsp salt

    • 0.5 tsp black pepper

    • 1 tsp cayenne pepper

    • 2 cups beef stock

    Directions

    • In a large pot, heat olive oil over medium heat. Add the diced onion and chopped bell pepper, cooking for about 5 minutes until softened.
    • Add minced garlic to the pot and cook for an additional minute until fragrant, making sure not to burn the garlic.
    • Stir in the chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper, cooking for another minute to release the spices’ flavors.
    • Add the smoked pulled pork to the pot, stirring well to combine with the spices and vegetables.
    • Pour in the crushed tomatoes and beef stock, then add the drained kidney and black beans, stirring everything together.
    • Bring the chili to a boil, then reduce heat to low and let simmer uncovered for about 3 hours, stirring occasionally to prevent sticking.
    • Taste the chili and adjust seasoning if necessary. For more heat, add additional cayenne pepper to taste.
    • Serve the smoked pulled pork chili hot, with your choice of toppings such as shredded cheese, sour cream, or chopped green onions.
