    • Spread the chicken mixture evenly over the puff pastry, leaving a half-inch border around the edges.
    • Sprinkle shredded cheese generously over the chicken mixture, ensuring it’s evenly distributed for maximum flavor.
    • Starting from one edge, gently roll the pastry into a log shape, pressing the edges to seal it tightly.
    • Using a sharp knife, slice the log into approx. one-inch pinwheels, aiming for consistency in thickness.
    • Arrange the pinwheels on the prepared baking sheet, leaving space between them to rise and expand.
    • Lightly brush the tops of the pinwheels with olive oil to encourage a golden, crispy finish in the oven.
    • Bake the pinwheels for 20-25 minutes, or until they are puffed and golden brown, then remove and cool slightly.
