- 4 cod fillets (about 6 oz each)
- 1 pint cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup capers, drained
- 4 cloves garlic, minced
- 1 lemon, sliced
- 2 tablespoons extra virgin olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- Fresh parsley for garnish
- Cooked quinoa or couscous for serving
Instructions

Preheat your oven to 400°F (200°C).

In a large baking dish, place the cod fillets.

Surround the cod with halved cherry tomatoes, sliced Kalamata olives, capers, minced garlic, and lemon slices.

Drizzle extra virgin olive oil over the top.

Sprinkle dried oregano, dried thyme, salt, and black pepper evenly over the fish and vegetables.
