    • 1 lb chicken breasts

    • 8 oz mushrooms

    • 1 tbsp olive oil

    • 2 cloves garlic

    • 0.25 cup Parmesan cheese

    • 0.5 tsp salt

    • 0.25 tsp black pepper

    • 0.5 tsp thyme

    Directions

    • Preheat the oven to 375 degrees Fahrenheit and prepare a baking dish by lightly greasing it with oil or cooking spray.
    • Finely chop the mushrooms and garlic, then sauté them in olive oil over medium heat until the mushrooms are soft and the garlic is fragrant.
    • Mix the sautéed mushrooms with Parmesan cheese, thyme, salt, and black pepper in a bowl, ensuring all ingredients are well combined.
    • Carefully cut a pocket in each chicken breast and stuff them with an equal amount of the mushroom mixture, securing with toothpicks if necessary.
    • Place stuffed chicken breasts in the prepared baking dish and cover with aluminum foil to keep them moist during baking.
    • Bake the chicken in the preheated oven for about 30 to 40 minutes, or until the chicken is cooked through and the cheese is melted.
    • Remove the foil for the last 10 minutes of baking to allow the top to turn golden brown and the chicken to fully cook.
